  properly washed; Observed no bare hand contact with ready-to-eat foods. Gloves, tongs while handling ready-to-eat food.
  
  
  3) Demonstration of Knowledge  - Person in Charge demonstrates knowledge by being ServSafe Certified in food  protection, and
  by responding to food safety questions regarding  this operation,
