  IV. Demonstration of Knowledge - Person in Charge does not demonstrates knowledge by responding to food safety questions |
  regarding the operation. I discussed this issue with the owner/operator. I highly recommend that person in charge take a Level 1 |
  or Level 2 food protection course. This iis documented in my regular inspection report also. |
