- PERSONNEL CLEANLINESS -Personal appearance and hygiene of staff was good. |

  - PREVENTION OF CONTAMINATION FROM HANDS - Observed no barehand contact of ready-to-eat foods. Utensils and |
  gloves were used by employees to handle ready to eat foods. Utensils were provided for dispensing foods at self-service stations. |
|
  - PERSON IN CHARGE - Person in Charge did not demonstrate sufficient food safety knowledge as evidenced by the critical |
  violations cited in the standard inspection report. Education was provided. Also, the PIC has completed a Serv Safe course and |
  is scheduled to take the exam. |
|
- THAWING - Frozen foods are thawed in accordance with Ohio Administrative. |
|
  - Observed proper cooking temperatures and parameters as specified in Ohio Administrative Code. All potentially hazardous |
  foods that have been cooked are refrigerated and reheated for hot holding within 2 hours to 165°F; are cold held at 41°F or |
  below except for foods under the approved time in lieu of temperature policy; and hot held at 135°F or above except for hot foods |
  under the approved time in lieu of temperature policy. The cooked TCS foods are cooled to 70°F within 2 hours and from 70°F to |
  41°F or below within 4 hours. Time in Lieu of Temperature Policies were posted. |

  - PROTECTION FROM CONTAMINATION - Raw animal products were properly stored and separated from ready to eat foods |
  and foods with a lower minimum cooking temperature. Observed some residue buildup on food equipment. These issues were |
  discussed with the PIC and will be corrected. |
