  1) No written procedure or verification forms were available concerning employee health for diseases related to food.   written
  procedure on cleanup concerning vomit/ diarrhea or actual vomit/ diarrhea cleanup kit. Left information about these issues.
  
  2) Hand washing facilities are adequate. Handwashing noted.  Exposed ready-to-eat foods not touched by bare hands. Gloves,
  tongs, spatulas used while handling with ready to eat food.
  
  3) Person in charge demonstrates knowledge with responses to food safety questions regarding this operation and certification for
  Level 2 training.
  
  4) Time/temperature controlled for safety foods (TCS) that have  been cooked and refrigerated are then reheated for hot holding 
  within  2 hours to 165°F. Cooked potentially hazardous foods  cooled from  135°F to 70°F within 2 hours and from 70°F to 41°F 
  or below within 4 hours. Soups chilled rapidly by using chill  sticks. Hot foods held at 135°F or above and cold foods held at 
  41°F or below. Time/temperature controlled for safety foods are date marked.
  
  5) Raw animal foods separated from raw ready-to-eat foods and   cooked ready-to-eat foods.
  
  6) Temperature measuring device is accessible.
