| VII - Observed potentially hazardous foods reheated to 165F, hot held above 135F, and cold held below 41F except for hot dogs |
| held at 125F, salami cold held @ 49F, and peperoni cold held @ 49F. Issue was discussed with person in charge. All three food |
| items were discarded. The thermistat on the cold holding unit was turned to hold at a colder temperature. According to the |
| person in charge, a new thermistat has been ordered for the hot holding unit. The person in charge has agreed not to use the hot |
| holding unit to hold potentially hazardous foods until the unit is repaired and hot holding above 135F. A follow up on this issue |
| will be conducted during the next regular inspection. |
