  Comments:
  II - Personal Cleanliness - Personal appearance and cleanliness of staff was good.
  III - Handwashing - Protection of Contamination from Hands - Observed good handwashing and glove use.
  IV - Person-in-Charge demonstrated good food safety knowledge.
  VII - Observed potentially hazardous foods reheated to 165F, hot held above 135F, and cold held below 41F except for hot dogs
  held at 125F, salami cold held @ 49F, and peperoni cold held @ 49F. Issue was discussed with person in charge. All three food
  items were discarded.  The thermistat on the cold holding unit was turned to hold at a colder temperature.  According to the
  person in charge, a new thermistat has been ordered for the hot holding unit.  The person in charge has agreed not to use the hot
  holding unit to hold potentially hazardous foods until the unit is repaired and hot holding above 135F. A follow up on this issue
  will be conducted during the next regular inspection.
