  VII - All potentially hazardous foods that have been cooked are refrigerated and reheated for hot holding within 2 hours to |
  165F; are cold held below 41F; hot held above 135F except for rice hot holding at 116F - 133F. The issue with the rice was |
  discussed with the PIC and was discarded at the time of inspection. Observed a medium sized bucket of curry sauce (containing |
  coconut milk) cooling on prep table at room temperature. The PIC said it had been cooling for approximately one hour. The center |
  was at approximately 170F and the top was at 114F. The issue was discussed with the PIC and the sauce was divided into smaller |
  containers and placed in coolers. |

  XI - PROTECTION FROM CONTAMINATION - Observed raw animal foods properly stored and separated from ready to eat |
  foods except for raw shrimp and raw chicken stored above ready to eat foods such as lemons and other foods with a lower minimum |
  cooking temperature in walk in cooler. The issue was discussed with the employee escorting me. |
