  1) Hand washing facilities are adequate.  Hands are properly washed when required. Exposed ready-to-eat foods are not touched by
  bare hands. Vinyl gloves are used while handling exposed ready to eat foods.
  
           
  2) Person in charge demonstrates knowledge with responses to food safety questions regarding the operation.
  
                                              
  3) Foods are thawed in accordance with Ohio Administrative Code.
  
      
  4) Potentially hazardous foods that have been cooked and refrigerated are reheated for hot holding within 2 hours to 165°F. Hot
  foods are being held at 135°F or above and cold foods are being held at 41°F or below.
  
          
  5) Refrigerated ready to eat potentially hazardous foods are date marked and discarded as required
