  1) Hand washing facilities are adequately supplied. Handwashing by staff.. Exposed ready-to-eat foods are not touched by bare
  hands. Vinyl gloves,,tongs, spatulas are used as barriers. Discussed the employee health policy with the person in charge and
  keeping information on each employee relating to food diseases.
  
  
  2) Person in charge demonstrates knowledge with certification in Servsafe Level 2, and responses to food safety questions
  regarding the operation.
  
  
  3) Time/temperature controlled for safety foods that were cooked and refrigerated are reheated for hot holding within 2 hours to
  165°F. Cooked potentially hazardous foods are cooled from 135°F to 70°F within 2 hours and from 70°F to 41°F or below within 4
  hours. Hot foods held at 135°F or above and cold foods held at 41°F or below. Time/temperature controlled for safety foods date
  marked.
  
  
  4) Raw animal foods are separated from raw ready to eat foods / cooked ready to eat foods.
