  1) Cafeteria staff personal hygiene is good. Hair restraints worn by food handlers
  
  
  2) Hand washing facilities are well supplied. Exposed ready-to-eat foods are not touched by bare hands. Gloves, tongs, and
  spoons are used while handling food.
  
  
  3) Hot foods are being held at 135°F or above and cold foods are being held at 41°F or below. Hot food products at the steam
  table are reheated to 165° within the required time frame. Temperature log sheets are maintained for all food products.
  Time/temperature controlled for safety foods are date marked. Time is used as a public health control.for the salad bar. A
  written policy is available. The food items served in 4 hr periods and discarded as required after time is up.
