- PERSONNEL CLEANLINESS - Personal appearance and hygiene of staff was good. |
|
  - PREVENTION OF CONTAMINATION FROM HANDS - Observed no barehand contact of ready to eat foods. Gloves and |
  utensils were available to handle ready to eat foods. |
|
  - PERSON IN CHARGE- Person in Charge demonstrated good food safety knowledge except where critical violations were cited |
  in the standard inspection. Education was provided. |
|
  THAWING - Observed TCS foods properly thawing under refrigeration. TCS foods are thawed using approved methods as |
  described in the Ohio Administrative Code. |
|
  - TCS Foods - Observed TCS foods cold holding in walk-in cooler at internal temperatures above 41°F including but not limited |
  to: Cheese Sauce @ 44°F, Roasted Garlic @ 42.5°F, Beans @ 42°F. Ambient air temperature in this walk-in cooler was at 48°F. |
  The issue was discussed with the PIC and was corrected within 4 hours (See Standard Inspection for details). Maintain TCS |
  foods cold holding at 41°F or below. All other TCS foods were cold held at 41°F or below. All hot TCS foods were hot held |
  at 135°F. Observed chicken cooked at 173°F. Cambros and electric hot boxes are available to transport food on-site for events. |
  A written Non-Continuous Cooking Procedure was provided for chicken breast and bratwurst. Observed good cooling logs and |
  other temperature logs. |
|
  - DATE MARKING - Observed good datemarking except for an open package of cheese sauce held for more than 24 hours with no |
  datemarking. The issue was discussed with the PIC and will be corrected. All ready to eat and TCS foods must be consumed or |
  discarded within 7 days of preparation from when original container was opened and must be datemarked accordingly if not used |
  within 24 hours. |

  - PROTECTION FROM CONTAMINATION - Observed proper separation of raw animal foods. Observed a buildup of residue on |
  clean food equipment and utensils. The issue was discussed and will be corrected. |
|
- TEMPERATURE MEASURING DEVICE - Temperature measuring devices were provided. |
|
ALL COOLERS WERE COLD HOLDING AT 41°F OR BELOW EXCEPT WHERE NOTED ABOVE. |
