  3717-1-04.5 Equipment, utensils, and linens: cleaning of equipment and utensils.
  (C)Cooking and baking equipment - cleaning frequency.
      (1)The food-contact surfaces of cooking and baking equipment shall be cleaned at least every twenty-four hours. 
       This paragraph does not apply to hot oil cooking and filtering equipment if it is cleaned as specified in paragraph 
        (B)(2)(f) of this rule.
      (2) The cavities and door seals of microwave ovens shall be cleaned at least every twenty-four hours by using 
      the manufacturer's recommended cleaning procedure.

  3717-1-06.1 Physical facilities: design, construction, and installation.
  (A)Floors, walls, and ceilings.
  Except as specified under paragraph (D) of this rule and except for antislip floor coverings or applications that
  may be used for safety reasons, floors, floor coverings, walls, wall coverings, and ceilings shall be designed, 
  constructed, and installed so they are smooth and easily cleanable.

  VIOLATION: Leak in bottom of grease trap. Must be repaired.
   
  3717-1-05.1 Water, plumbing, and waste: plumbing system.
  (S)Plumbing system - maintained in good repair.
  A plumbing system shall be:
      (1) Repaired according to the Ohio building code; and
      (2) Maintained in good repair.

  VIOLATION: Broken thermometer on reach in cooler, and no cooler inside. Repair exterior thermometer or install a thermometer
  inside of this cooler.
   
  3717-1-04.4 Equipment, utensils, and linens: maintenance and operation.
  (Q)Utensils, temperature and pressure measuring devices - good repair and calibration.
      (1) Utensils shall be maintained in a state of repair or condition that complies with the requirements specified
      under rule 3717-1-04 of the Administrative Code and rule 3717-1-04.1 of the Administrative Code or shall be 
      discarded.
      (2) Food temperature measuring devices shall be calibrated in accordance with manufacturer's specifications as 
      necessary to ensure their accuracy.
      (3) Ambient air temperature, water pressure, and water temperature measuring devices shall be maintained in 
      good repair and be accurate within the intended range of use.

  VIOLATION: Observed mouse feces in kitchen. Contact a pest control company. Continuously monitor kitchen and dining area for
  rodent activity. Clean and sanitize this area.
   
  3717-1-06.4 Physical facilities: maintenance and operation.
  (K)Controlling pests.
  The presence of insects, rodents, and other pests shall be controlled to minimize their presence on the premises
  by:
      (1) Routinely inspecting incoming shipments of food and supplies;
      (2) Routinely inspecting the premises for evidence of pests;
      (3) Using methods, if pests are found, such as trapping devices or other means of pest control as specified
      under paragraphs (C), (K) and (L) of rule 3717-1-07.1 of the Administrative Code; and
      (4) Eliminating harborage conditions.
