  THIS INSPECTION WAS DONE AS A CONSULTATION PER REQUEST OF RON MAPP OF ST. PAUL'S EPISCOPAL
  CHURCH. ACCORDING TO MR. MAPP, THEY ARE EXPLORING THE IDEA OF BRINGING IN SOMEONE TO OPERATE A
  FOOD SERVICE OPERATION OUT OF THE CHURCH KITCHEN AND POSSIBLY DO SOME CATERING. AT THE TIME OF
  INSPECTION THE FOLLOWING ISSUES WERE IDENTIFIED AND WOULD NEED TO BE CORRECTED.
   
  -NO MOP HOOKS WERE PROVIDED TO HANG MOPS.
   
  -OBSERVED SHELVES MADE OF A BARE UNSEALED WOOD MATERIAL IN DRY STORAGE ROOM. THE WOOD WOULD
  HAVE TO PAINTED OR SEALED WITH A POLYURETHANE SEALANT SO THAT IT IS SMOOTH, NON-ABSORBENT AND
  EASILY CLEANABLE.
   
  -COUNTER TOPS AND WAREWASHING MACHINE AND DRAINBOARDS WERE NOT SEALED TO THE WALL. ALL CLEAN IN
  PLACE EQUIPMENT MUST BE SUFFICIENTLY SPACED OR SEALED TO THE WALL TO FACILITATE CLEANING.
   
  -OBSERVED DOUBLE SINK BUILT INTO DRAINBOARD THAT WOULD LIKELY BE USED FOR FOOD PREPARATION. THE
  SINK WAS WELDED BUT WAS IN GOOD SHAPE. THIS SINKS COULD BE PERMITTED ON A PERFORMANCE BASIS. IF
  THE SINKS COULD NOT BE MAINTAINED CLEAN TO SIGHT AND TOUCH THEY WOULD NEED TO BE REPLACED WITH
  A NON-WELDED FOOD PREP SINK THAT IS NSF APPROVED.
   
  -OBSERVED MISSING COVING THROUGHOUT KITCHEN AND DRY STORAGE AREA. ALL FLOOR AND WALL JUNCTURES
  MUST BE COVED TO FACILITATE CLEANING.
   
  -OBSERVED CONDENSATION BUILDUP ON WALLS AND CEILING NEAR HIGH TEMPERATURE WAREWASHING MACHINE.
  THE CEILING TILE THAT IS DAMAGED FROM THE CONDENSATION MUST BE REPLACED AND WALLS CLEANED TO
  REMOVE RUST STAINS FROM CONDENSATION OR REPAINTED IF STAINS CANNOT BE REMOVED. IF NECESSARY
  MECHANICAL VENTILATION MAY NEED TO BE INSTALLED IF CONDENSATION FROM WAREWASHING MACHINE IS AN
  ISSUE BECOMES A SOURCE OF POTENTIAL CONTAMINATION OF CLEAN EQUIPMENT. ALTERNATIVELY, CONVERTING
  THE WAREWASHING MACHINE FROM A HIGH TEMPERATURE SANITIZING MACHINE TO A CHEMICAL SANITIZING
  MACHINE MAY RESOLVE CONDENSATION ACCUMULATION AND THE NEED FOR MECHANICAL VENTILATION.
   
  -OBSERVED MISSING CUPBOARD DOOR. THE DOOR MAY NEED TO BE REPLACED TO PROTECT CLEAN EQUIPMENT /
  FOOD.
   
  -OBSERVED MISSING, TORN, OR CRACKED FLOOR TILE AROUND FLOOR DRAIN. REPLACE MISSING, TORN, OR
  CRACKED FLOOR TILE AROUND FLOOR DRAIN SO THAT THE FLOOR IS SMOOTH, NON ABSORBENT AND EASILY
  CLEANABLE.
   
  -A DOUBLE DOOR REACH IN COMMERCIAL COOLER AND A SINGLE DOOR UPRIGHT REACH IN FREEZER WAS
  PROVIDED. ADDITIONAL COLD HOLDING AND FREEZER EQUIPMENT MAY NEED TO BE PROVIDED DEPENDING ON
  MENU AND NUMBER OF MEALS SERVED.
   
  THE ABOVE OBSERVATIONS ARE A PRELIMINARY ASSESSMENT OF THE KITCHEN. PRIOR TO OPENING, A MENU, A
  LIST OF EQUIPMENT MAKE AND MODEL NUMBERS AND PLANS OF THE FACILITY MUST BE SUBMITTED FOR PLAN
  REVIEW. ADDITIONALLY, BUILDING AND CODE SHOULD BE CONTACTED TO SCHEDULE A CODE COMPLIANCE
  INSPECTION TO ENSURE THAT THE FACILITY MEETS ALL BUILDING, PLUMBING, ELECTRIC AND FIRE CODES.
  IF PLANS ARE APPROVED AND THE FACILITY MEETS CODE A FINAL WALK THROUGH WILL BE CONDUCTED AND A
  LICENSE APPLICATION WILL BE ISSUED IF THERE ARE NO ISSUES IDENTIFIED. ONCE THE LICENSE
  APPLICATION IS RETURNED WITH THE LICENSE FEE THE FACILITY MAY OPEN FOR BUSINESS.
