  This inspection was conducted at the request of The Workshops, Inc. to determine requirements to bring the old Caboose
  restaurant up to the current health code.
   
  At this time, the restaurant has been essentially gutted – the majority of the equipment has been removed.  
   
  A plan review application, plans, equipment make/model, and menu needs to be submitted to the Canton City Health Department.
  
   
  OBSERVED AREAS OF FLOOR AND WALLS IN POOR REPAIR. MAINTAIN WALLS AND FLOOR ACCORDING TO THE
  RULE REQUIREMENTS (I.E. SMOOTH AND EASILY CLEANABLE).
   
  OBSERVED COVING EITHER MISSING OR IN POOR REPAIR. MAINTAIN COVING ACCORDING TO THE RULE
  REQUIRMENTS.

  (A)     Repairing.
   
       The physical facilities shall be maintained in good repair.  
   
  -3717-1-06.1 Physical Facilities:  Design, Construction, and Installation
   
  (A) Floors, walls, and ceilings.
   
        Except as specified under paragraph (D) of this rule, the floors, floor coverings, walls, wall coverings, and
       ceilings shall be designed, constructed, and installed so they are smooth and easily cleanable, except that antislip
       floor coverings or applications may be used for safety reasons.

  (C)     Floor and wall junctures - coved, and enclosed or sealed.
   
        (1) In food service operations or retail food establishments in which cleaning methods other than water flushing
       are used for cleaning floors, the floor and wall junctures shall be coved and closed to no larger than one
       thirty-second inch (one millimeter).
   
        (2) The floors in food service operations or retail food establishments in which water flush cleaning methods
       are used shall be provided with drains and be graded to drain, and the floor and wall junctures shall be coved
       and sealed.
   
   
  OBSERVED SOME BARE WOOD SHELVING IN STORAGE ROOM. SEAL ALL BARE WOOD SO IT IS SMOOTH AND
  EASILY CLEANABLE.

        Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require
