  NECESSARY SO THAT THEY ARE SMOOTH, NON ABSORBENT, AND EASILY CLEANABLE.

       Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require 
       frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material.

  OBSERVED HANDWASH SINKS IN RESTROOM AND IN KITCHEN THAT ARE NOT SEALED TO THE WALL. RECAULK
  BEHIND SINKS SO THAT SINKS ARE SEALED TO THE WALL TO FACILITATE CLEANING.

  (B)     Fixed equipment installation - spacing or sealing.  
   
       (1)     Equipment that is fixed because it is not easily movable shall be installed so that it is:  
   
            (a)     Spaced to allow access for cleaning along the sides, behind, and above the equipment;
   
            (b)     Spaced from adjoining equipment, walls, and ceilings a distance of not more than one thirty-second inch 
            or one millimeter; 
            
            or
   
            (c)     Sealed to adjoining equipment or walls, if the equipment is exposed to spillage or seepage.

  OBSERVED A BUILDUP OF GREASE AND OTHER RESIDUE IN KITCHEN ON EQUIPMENT INCLUDING: SHELVING,
  CUPBOARDS, AND IN ITEMS INSIDE CUPBOARD, IN REFRIGERATOR, AND ON STOVE. THE KITCHEN IS NO
  LONGER IN USE, HOWEVER, IT MUST BE KEPT CLEAN TO SIGHT AND TOUCH. ALSO OBSERVED AN
  ACCUMULATION OF FLUID AT BOTTOM OF REACH IN COOLER BEHIND BAR (NEXT TO COCA COLA COOLER). IF
  THERE IS A LEAK IN THE COOLER REPAIR THE COOLER AS NECESSARY AND MAINTAIN THE COOLER CLEAN TO
  SIGHT IN TOUCH.
   
  3717-1-04.5 Equipment, Utensils, and Linens:  Cleaning of Equipment and Utensils
   
  (A)     Equipment, food-contact surfaces, nonfood-contact surfaces, and utensils. 
   
       (1)     Equipment food-contact surfaces and utensils shall be clean to sight and touch.  
   
       (2)     The food-contact surfaces of cooking equipment and pans shall be kept free of encrusted grease deposits 
       and other soil accumulations.  
   
       (3)     Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and 
       other debris.

  OBSERVED CRACKS IN CEILING THROUGHOUT FACILITY DUE TO WATER DAMAGE. REPAIR CEILINGS AS
  NECESSARY TO MAINTAIN CEILINGS SMOOTH AND EASILY CLEANABLE. OBSERVED HOLES IN WALL IN MENS
  RESTROOM. REPAIR HOLES IN WALLS TO MAINTAIN WALLS SMOOTH AND EASILY CLEANABLE.
   
  3717-1-06 Physical Facilities:  Materials for Construction and Repair
   
       (A)     Indoor areas - surface characteristics
   
            under conditions of normal use shall be:
   
                 (a)     Smooth, durable, and easily cleanable for areas where food service activities or retail food
                 establishment activities are conducted;
   
                 (b)     Closely woven and easily cleanable carpet for carpeted areas;
   
                 and
   
                 (c)     Nonabsorbent for areas subject to moisture such as food preparation areas, walk-in refrigerators,
                 warewashing areas, toilet rooms, mobile food service operation servicing areas, and areas subject to
                 flushing or spray cleaning methods.

  OBSERVED A BUILDUP OF FOOD, DIRT, AND GREASE ON WALLS, CEILING, AND FLOOR IN KITCHEN. THE
  KITCHEN IS NO LONGER IN USE BUT STILL MUST BE KEPT CLEAN. CLEAN THE WALLS, CEILINGS, AND FLOOR
  AS OFTEN AS NECESSARY TO MAINTAIN CLEAN.
   
  3717-1-06.4 Physical Facilities:  Maintenance and Operation
   
  (B)     Cleaning - frequency and restrictions.
   
       (1)     The physical facilities shall be cleaned as often as necessary to keep them clean.
   
       (2)     Cleaning shall be done during periods when the least amount of food is exposed such as after closing.
       This requirement does not apply to cleaning that is necessary due to a spill or other accident.
