  Rule changes effective March 1 2019 that impact you- 3 compartment sinks and warewashers are required to have an air gap in
  the drain line. Also, some minor changes to employee health training, we updated the handout we give and will provide a new
  form for you to use.

  The hot water tank is leaking. Per the PIC, she has already had maintenance look at it. There is some discussion of possibly
  removing it altogether. If that is done, please monitor the dishwasher temps closely to ensure that washing dishes doesn't
  drain the tank and leave the kitchen without hot water for handwashing and warewashing activities. You must ensure that the
  hot water supply remains adequate.
