  Rules changes effective March 1, 2019 now require three compartment sinks to be indirectly drained.. There are also some
  changes to employee health reproting training, we have updated forms to reflect those changes and left this with the PIC.

  Per PIC, one of the reach in coolers in the dining room stopped working. At this point the decision was made to replace it
  over the summer instead of repairing it again. Please send the cut sheet for the new unit, once it is selected, for the file.

  Time/temperature controlled for safety food - cold holding.
  At time of inspection the salad cooler was holding food at 45°F. Foods were removed to the walk in and the PIC will monitor
  temperatures inside and call service technician if needed. Per the thermometer inside the temperature is 42°F and per the
  exterior thermometer the temperature is 38°F.
