  Per PIC, the sink is to be replaced at some point in the future and the existing cabinets will be replaced with shelving.
  Please make sure to submit information prior to making changes. If the sink will be replaced with a warewashing (3
  compartment) sink, please keep in mind that the sink will be required to be indirectly draining.

  Maintaining knives and pizza cutters to use for pizza day would necessitate a three compartment sink for warewashing.

  Salad on the service line was 56°F. PIC discarded. Remember to only bring out only sufficient quantities for each lunch
  period and maintain the rest in refrigeration as lettuce does not maintain proper holding temperatures well when at room
  temperature. Holding more than needed on the service line between multiple lunch periods is not "for immediate service" and
  would require a written time in lieu of temperature procedure, time marking and a risk level 4 license.
