  3.4 Hot dogs are being sold quickly, very few are in hot holding at time of inspection. PIC cites TILT for low temperatures.
  TILT is not an approved process for temporary events. There is no written policy for TILT nor any time labling of the bins of
  hot dogs. PIC increased warmer temp and is encouraged to monitor temperatrues of items in hot holding in order to better
  establich settings needed to properly hot hold items. Hot holding is to be 135°F.
