   Sanitizer and test kit on site. Most wares are disposable and will be thrown away at end of event.
  Thermometer present and used.
  Gloves in use. 
   
  Food is held hot or cold on tables in serving areas using chafing dishes and ice. Foods are out of temp in prep and staging
  area. Trays that are prepped and staged are then taken to the tables, with partially filled trays removed and placed back into
  refrigeration before being refilled to then replace trays that need replenished.
   
  (Trays are not remaining out of temperature controls longer than a half hour (estimated) before being cycled back to the
  refrigeration unit prior to refilling. Length of event is less than three hours with foods being constantly moved kitchen to
  tables to refrigeration to prep/staging and back to tables. Time is heavily relied on for food safety at this event.)
